Ingredients
- 1 2/3 c water
- 1/2 c fresh cilantro
- 1/4 c fresh parsley
- 2 scallions, chopped
- 1 garlic clove
- 1 tbsp veg oil
- 1 c jasmine rice
- salt

Preparation
Step 1
Puree water, cilantro, parsley, scallions, and garlic in a blender until smooth. Heat oil over a saucepan over high. Add rice, stir to coat. Cook until toasted, 2 minutes. Add herb puree and 1 tsp salt. Bring to a simmer. Reduce heat to low and cook, covered for 20 minutes. Remove from heat, let stand covered, for 10 minutes. Fluff before serving.
