Two Bean & Beet Salad with Feta

Ingredients

  • 2 lbs small goden & red beets
  • 2 lbs mixed yellow wax & green beans
  • 1/2 C olive oil
  • 1/4 C red wine vinegar
  • 2 T minced chives
  • Salt
  • 1/4 lb. crumbled, Greek feta

Preparation

Step 1

Preheat oven to 375. Arrange beets in baking dish with 1/4" water. Cover with foil & bake 45 min. Let cool, peel & cut into 1/2" wedges.
Cook beans 2 min. in microwave; plunge in cold water to refresh. Drain & pat dry.
In small bowl, whisk olive oil with vinegar til blended. In large bowl, toss beans with 1/2 C vinaigrette & transfer to platter. In same large bowl, gently toss beets with chives & reamining vinaigrette & spoon over beans. Season with salt & sprinkle feta on top.
