Paleo Sausage and Vegetable Bake (Breakfast)- Paleo Cupboard

Ingredients

  • 2 medium apples, peeled and chopped into 1" pieces (any kind you like)
  • 3 cups chopped butternut squash
  • 1 small red onion, peeled and quartered
  • 1 large sweet potato, peeled and chopped into 1" pieces
  • 3 cloves garlic, chopped
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 4 Tbsp. extra virgin olive oil
  • 4-5 large uncooked sausages (your favorite variety)

Directions:

1. Preheat oven to 375F. Place the apples, squash, onion, sweet potato in the pan and stir. Sprinkle with the spices and drizzle with the olive oil and toss to coat.

2. Place the mixture in the oven and bake for 20 minutes. Re move from oven, toss the vegetables and place the sausages on top. Return to the oven and bake for another 20-25 minutes until sausages are cooked through and the vegetables are tender. You can place the pan under the broiler for a minute or two if you want your sausages and vegetables browned a little more.

3 Remove from oven, slice sausages and serve
