Mexican Chicken Alfredo

  • 1/2 pkg. (8 oz) gemelli or spiral pasta
  • 1 lbs. boneless skinless chicken breasts, cubed
  • 1 small onion, chopped
  • 1/8 tea. salt
  • 1/8 tea. pepper
  • 1/2 Tbsp. oil
  • 1 jars (15 oz) Alfredo sauce
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup medium salsa
  • 2 Tbsp. cup 2% milk
  • 1 tea. taco seasoning

Preparation

Step 1

Cook pasta according to package directions. Meanwhile, in a large skillet over medium heat, cook the chicken, onion, salt and pepper in oil until chicken is no longer pink. Stir in Alfredo sauce; bring to a boil. Stir in cheese, salsa, milk and taco seasoning.

Drain pasta, toss with chicken mixture. Pour into a 8" square baking dish. Cover and bake at 3590 degrees for 30-35 minutes or until bubbly.
