No-Boil Butternut Squash Lasagna

Ingredients

  • 1.25 lbs sweet Italian turkey sausage, casings removed
  • 1 jar Dave's Gourmet Butternut Squash pasta sauce
  • 1 10 oz package frozen winter squash, thawed
  • 1.5 cups water
  • 1 garlic clove, chopped
  • 1 tsp Italian seasoning
  • 15 oz part-skim ricotta cheese
  • 4 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 eggs
  • 1 tbsp parsley
  • 1/2 tsp black pepper
  • 1 8 oz package lasagna noodles, uncooked

Step 1

1. Heat oven to 350. Grease a 9x13 baking dish; set aside.

2. In a large skillet, brown sausage. Drain.

3. Add pasta sauce, thawed squash, water, garlic and Italian seasoning. Stir to combine and simmer, covered, for 10-15 minutes.

4. In a medium bowl, combine ricotta, 2 cups of mozzarella, parmesan, eggs, parsley and black pepper.

5. Pour about 1 cup meat and sauce mixture into bottom of baking dish.

6. Top with 3 lasagna noodles.

7. Top noodles with 1 cup sauce and about half of the cheese mixture.

8. Repeat layers of noodles, sauce and cheese.

9. Top with 3 more lasagna noodles and remaining sauce/meat mixture. Sprinkle with remaining mozzarella.

10. Cover with foil and bake for 45 minutes.

11. Carefully remove foil and return to oven; bake an additional 15 minutes or until cheese is melted.

12. Let stand 10 minutes before cutting.
