Ingredients

  • 1 16 oz container Cottage Cheese (I use 2%, in for a penny, in for a pound)
  • 1 16oz container sour cream
  • 1 12oz package broad egg noodles
  • 5 eggs, beaten
  • 1 cup sugar
  • 1 stick butter, melted
  • 1 tablespoon vanilla
  • 1 tablespoon cinnamon
  • Dried cherries or raisins (optional)
  • extra cinnamon & sugar to shake over top before baking

Step 1

1. Boil noodles in water until almost done. Check regularly, it can take me anywhere from 4-9 minutes. You want it SERIOUSLY al dente. Drain when ready.
2. Beat eggs well and add cottage cheese, sour cream, and sugar. Mix well.
3. Once well mixed, slowly add melted butter and stir in.
4. Add vanilla and cinnamon, stir well - the cinnamon can clump if you don't stir enough.
5. Add cooked noodles (and dried cherries or raisins if you want) and, you guessed it, stir well.
6. Grease a 8" x 13" dish
7. Pour the mixture into said dish. Sprinkle extra cinnamon & sugar over top.
8. Bake 1hr @ 350 degrees.
