Dressing 'Roasted Red Pepper Yogurt'

  • 1/4 tsp Olive Oil
  • 1 Red Bell Pepper
  • 2 oz NonFat Milk
  • 2 oz Plain Nonfat Yogurt
  • 1/8 tsp Cracked Black Pepper

Preparation

Step 1


Rub tiny bit of Olive Oil over Red Bell Pepper. Roast Pepper in 425° oven turning every 10 min.
Roast until skin turns dark. Remove & place under cold H2O. Peel skin & discard. Core & seed, saving meaty flesh. Break into 2” pieces & place in blender. Add Milk & puree until smooth. Blend until smooth. Remove Puree & add to mixing bowl. Add Yogurt & Black Pepper & whisk until well distributed
