Green Bean Salad with Walnut Dressing

Ingredients

  • 3 lbs green beans
  • 10 walnut halves, toasted and chopped
  • 4 T walnut oil
  • 1/2 C vegetable oil
  • 1/4 C red wine vinegar
  • 1 garlic clove
  • coarse kosher salt and freshly ground black pepper to taste

Preparation

Step 1

Blanch the beans in boiling water until just tender, about 3 to 4 minutes. Drain and chill immediately.

Mix the remaining ingredients and let stand 1 hour.

Immediately before serving, toss the beans in the dressing and remove the garlic clove.
