Ingredients

  • 2 cups all purpose flour
  • 3/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 large eggs
  • 1/2 cup canola oil
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 cup grated carrots, packed
  • 1 cup grated zucchini, packed
  • 3/4 cup shredded sweetened coconut

Step 1

1. Preheat oven to 375
2. In a bowl, whisk the all purpose flour, salt, baking powder and baking soda. In another bowl, whisk the eggs, canola oil, light brown sugar and granulated sugar.
3. Stir in the grated carrots, zucchini and coconut.
4. Fold in the dry ingredients.
5. Place batter in an 8x4 inch loaf pan and sprinkle with 1/2 cup coconut.
6. Tent the pan with foil and bake for 90 minutes, until a tester comes out clean.
