  • 5 1/4 lbs cubed beef
  • 4 1/2 onions, sliced
  • 9 carrots, slicked
  • 3 3/4 cups cubed potatoes
  • 4 1/2 stalks celery, sliced
  • 3/4 lbs fresh mushrooms, quartered
  • 1 1/2 (16 ounce) packages frozen mixed vegetables
  • 1 1/2 (28 ounce) cans crushed tomatoes
  • 7 1/2 cloves garlic, pressed
  • 1/2 tbsp dried rosemary
  • 1/2 tbsp dried sage
  • 1 tbsp and 1 1/2 tsp dried basil leaves
  • salt and pepper to taste
  • water or beef broth to cover (2-3 cups)

1. Preheat oven to 250 F
2. In large, overproof pot, combine been, onions, carrots, potatoes, celery, mushrooms, mixed vegetables, tomatoes. Season with garlic, rosemary, sage, basil, salt, pepper. Pour in water/broth. Cover tightly with foil and bake 5 to 6 1/2 hours.
