Ingredients

  • lbs cubed beef

  • onions, sliced

  • 9

    carrots, slicked

  • cups cubed potatoes

  • stalks celery, sliced

  • ¾

    lbs fresh mushrooms, quartered

  • (16 ounce) packages frozen mixed vegetables

  • (28 ounce) cans crushed tomatoes

  • cloves garlic, pressed

  • ½

    tbsp dried rosemary

  • ½

    tbsp dried sage

  • 1

    tbsp and 1½ tsp dried basil leaves

  • salt and pepper to taste

  • water or beef broth to cover (2-3 cups)

Directions

1. Preheat oven to 250 F 2. In large, overproof pot, combine been, onions, carrots, potatoes, celery, mushrooms, mixed vegetables, tomatoes. Season with garlic, rosemary, sage, basil, salt, pepper. Pour in water/broth. Cover tightly with foil and bake 5 to 6 1/2 hours.
