Peanut Brittle

Ingredients

  • 1 Cup Sugar
  • 1/2 Cup Corn Syrup
  • 1 3/4 -2 Cups dry roasted peanuts
  • 1 tsp. butter
  • 1 tsp vanilla
  • 1 tsp. baking soda

Preparation

Step 1

Grease baking sheets (used flexi pans in moms room)
In 2 qt glass measuring cup combine sugar and corn syrup and cook on high (in microwave) 3 minutes. Stir in peanuts using wooden spoon. Continue to cook on high 2 minutes. Stir in butter and vanilla and cook on high 1 3/4 min or until microproof candy thermonitor registers 300F. Mix in baking soda. Spread in pan. Using wooden spoon. Let cool and break into pieces.
