Sirloin with Parsley Sauce

Ingredients

  • 3 lb Sirloin Steak, 2 " thick
  • Sea salt & Black Peeper, to taste
  • 4 cups Parsley, chopped
  • 32 Anchovy fillets, mashed
  • 4 cloves garlic, minced
  • 2 TBSP Capers
  • 2 TBSP Red Wine Vinegar
  • 1 Cup Olive Oil

Preparation

Step 1

Season sirloin with sea salt & black pepper. Let sit.
Mix together parsley, mashed anchovies, garlic, capers & red wine vinegar. Drizzle olive oil in while mixing.
Grill steak until 125 -130 degrees on a meat thermometer for medium rare. Let rest for 15 minutes and then carve.

Top slices with parsley sauce.like to serve with rice pilaf & roasted peppers.
