Ingredients
- 3 lb Sirloin Steak, 2 " thick
- Sea salt & Black Peeper, to taste
- 4 cups Parsley, chopped
- 32 Anchovy fillets, mashed
- 4 cloves garlic, minced
- 2 TBSP Capers
- 2 TBSP Red Wine Vinegar
- 1 Cup Olive Oil

Preparation
Step 1
Season sirloin with sea salt & black pepper. Let sit.
Mix together parsley, mashed anchovies, garlic, capers & red wine vinegar. Drizzle olive oil in while mixing.
Grill steak until 125 -130 degrees on a meat thermometer for medium rare. Let rest for 15 minutes and then carve.
Top slices with parsley sauce.like to serve with rice pilaf & roasted peppers.
