Cup O Ravioli Soup

Built from fresh ingredients you control, this filling soup is much
better for you than prepackaged microwaveable options.

Ingredients

  • 12 oz. refrigerated cheese filled ravioli
  • 6 oz. shredded rotisserie chicken (1 1/2 cup)
  • 6 cups chopped fresh spinach
  • 3 Tbsp. minced fresh garlic
  • 1 Tbsp. dried Italian seasoning
  • 8 cups low-sodium chicken broth
  • 1/4 cup purchased basil pesto
  • Salt and black pepper to taste

Preparation

Step 1

Bring chicken broth, garlic and Italian Seasoning to a simmer, (just under a boil) in a large pot. Add ravioli and cook until ravioli float and are tender (5-6 minutes).

Add chicken and spinach and cook on a low simmer until chicken is heated through and spinach is wilted, about 5-6 minutes. Add pesto and taste for seasoning, adding salt and pepper to taste and serve.

Top with shredded or shaved parmesan if desired.
