Roasted Carrots with honey mustard

Ingredients

  • 2 lb small carrots with greens, peeled, tops trimmed and halved crosswise
  • 3 tbs whole grain mustard
  • 2 tbs olive oil
  • 1 tbs honey
  • salt, pepper
  • 2 tbs minced fresh parsley

Preparation

Step 1

Preheat oven to 400°. Line a baking sheet with aluminum foil.
Toss carrots with mustard, oil and honey. Season with salt and pepper. Arrange carrots in a single layer on prepared baking sheet.
Roast carrots until fork tender 25-30 minutes
Sprinkle carrots with parsley before serving.
