Chocolate Chip Banana Muffins

Ingredients

  • 3/4 c. firmly packed brown sugar
  • 1/2 c. margarine, softened
  • 1 1/2 c. (3 medium) mashed ripe bananas
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. flour
  • 1 c. whole wheat flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. mini semi-sweet chocolate chips

Preparation

Step 1

Heat oven to 350 degrees. In large mixer bowl combine sugar and butter. Beat at medium speed, scraping bowl often, until mixture is creamy (1-2 minutes). Add bananas, eggs and vanilla. Continue beating, scraping bowl often, until well mixed (1-2 minutes).
In medium bowl stir together flours, baking soda and salt. Add flour mixture to banana mixture; stir just until moistened. Fold in chocolate chips. Spoon into greased muffin pans.
Bake for 18 to 25 minutes or until light golden brown. Cool 5 minutes, remove from pans.
