Ingredients
- 1 garlic clove
- 2 tbsp toasted pine nuts
- 4 oz. basil leaves
- 2 tbsp greshly grated Parmesan cheese.
- 2 tbsp freshly grated cheese
- 1/2 cup extra-virgin olive oil
Preparation
Step 1
1. Put the garlic in a mortar and add a pinch of salt. Using the pestle, crush the garlic cloves. Add the pine nuts and pound to a paste.
2. In small handfuls, begin to add the basil (and add a pinch of salt to aid breaking up the basil). Keep adding basil; if the mortar is too full, transfer some o f the crushed mixture into a separate bowl.
