Skillet Chicken & Rice

Ingredients

  • 3/4 lb boneless skinless chicken cut into strips
  • 1/2 t dried italian seasoning
  • 1 pkg (5.8oz) rice a roni parmesan chicken
  • 1/2 C chopped red bell pepper
  • 1 C croutons- coarsely crumbled ( optional)

Preparation

Step 1

Toss chicken with italian seasoning in large skillet, melt 2 T butter over medium heat.
Add chicken, cook & stir 4-5 mins or until browned.
Stir in 2 C of water & rice, bring to a boil.
Cover, reduce heat to low, simmer 10 mins.
Stir in pepper, return to a simmer.
Cover, simmer 8-10 mins or until rice is tender & most of the liquid is absorbed.
Stir in 2/3 C milk & special seasoning.
Increase heat to high
Boil 2 mins, stirring constantly.
Sauce will be creamy.
Cover, remove from heat.
Let stand 3 mins.
Top with croutons.
