  • 2 1/2 cups all purpose flour

  • 1/4 teaspoon salt

  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar

Preparation

Step 1

In a medium bowl, combine flour, baking powder, and salt. Set aside. In the bowl of your mixer, beat butter and sugar on medium speed until light and fluffy, about 3 minutes. Add eggs and vanilla and beat until combined. With the mixer on low, slowly add flour mixture. Add a few drops of pink food coloring and mix until a smooth dough forms. Cover and refrigerate for at least one hour.

Preheat oven to 400. Lightly grease a large baking sheet and set aside. Roll dough out to 1/4 inch thick on lightly floured counter or board. Cut using a 2 inch heart cutter and place on baking sheet 1 inch apart. Bake for six minutes or until edges just barely start to turn golden. Remove and let cool completely on wire rack.

Prepare frosting: In the bowl of your mixer, beat butter, heavy cream, and vanilla on medium low speed until smooth. Slowly add powdered sugar until just combined. Add a couple drops of pink food coloring. Increase mixer speed to high and beat for one minute, until smooth and fluffy. Spread frosting on the flat side of half the cookies, and top with another cookie.
