Zucchini Salad

Ingredients

  • 2 1/2 2 1/2 1/2 lbs. zucchini
  • 3 3 3 Tablespoons olive oil
  • 1/4 1/4 1 cup fresh lemon juice (from 1 lemon)
  • 3/4 3/4 3/4 teaspoon sea salt
  • 1/2 1/2 1/2 teaspoon fresh grated black pepper
  • 1/3 1/3 1/3 cup shaved Parmesan
  • 1/2 1/2 1/2 cup toasted pine nuts

Preparation

Step 1

1. Use a vegetable peeler to shave zucchini into ribbons.

2. Place in large bowl.

3. Gently toss zucchini with olive oi, lemon juice, salt and pepper.

4. Top with shaved Parmesan and pine nuts and serve immediately.
