Chicken & Rice Casserole

Ingredients

  • 3/4 C chopped sweet red pepper
  • 3/4 C chopped green pepper
  • 1/2 C chopped onion
  • 1/2 C chopped fresh mushrooms
  • 1 garlic clove, minced
  • 2 t canola oil
  • 2 C uncooked instant brown rice
  • 2 C chicken broth
  • 1 1/2 C frozen corn , thawed
  • 1/4 t salt
  • 1/8 t pepper
  • 6 boneless skinless chicken breast halves, cooked
  • 1/4 C slivered almonds, toasted
  • 2 T minced parsley

Preparation

Step 1

In a large skillet, sauté the peppers, onion, mushrooms & garlic in oil until tender.
Stir in the rice, broth ,corn, salt & pepper: bring to a boil.
Transfer to a greased 7 x 11 baking dish.
Top with chicken.
Cover & bake at 350* for 20 - 25 mins or until heated through & rice is tender.
Sprinkle with almonds & pasrley..
