Hawaiian Chicken-Pasta Salad

Ingredients

  • 8-oz. pkg. penna pasta, cooked
  • 2 cups boneless, skinless chicken breasts, cooked and diced
  • 11-oz can mandarin oranges, drained
  • 8-oz pineapple tidbits, drained and juice reserved
  • 3/4 cup celery, sliced
  • 3/4 cup chopped walnuts
  • 1/4 cup onion, chopped
  • Dressing
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 2 Tbs. reserved pineapple juice
  • 1/2 tsp. salt

Preparation

Step 1

Rinse penne with cold water; drain well. Combine all ingredients except pineapple juice and mix well. Pour dressing over the top; toss to coat. Chill before serving. Serves 8.

For dressing: Mix all ingredients together; use a whisk to blend well.
