Ingredients

  • 12 ounces lean pork tenderloin, cut into 4 equal portions
  • 1/4 cup chopped shallot
  • 1 tablespoon canola oil
  • 1/4 cup sherry vinegar
  • 1/4 cup pure maple syrup
  • 1/4 cup low sodium chicken broth

Preparation

Step 1

Heat a large skillet over medium-high heat; add pork and sear for 2 minutes per side. Reduce heat to medium; add chopped shallot and oil; cook until soft, about 3 minutes. Add remaining ingredients and bring to a boil; cook until syrupy, about 5 minutes. Spoon the glaze over the pork before serving.

SERVING SUGGESTION: Steamed new potatoes tossed with butter and chopped parsley. Add a mixture of broccoli and cauliflower florets and baby carrots.
