White Chocolate Mac N' Sweet Mascarpone

Ingredients

  • 3/4 cup whole milk
  • 7.5 oz white chocolate, chopped
  • 3 large eggs
  • 2 Tbsp sugar
  • 1 –1/2 cups Mascarpone cheese
  • 1 cup cottage cheese
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 3 cups dry penne, cooked
  • 3/4 cup golden raisins
  • 1/2 cup graham cracker crumbs
  • 2 Tbsp butter, melted

Preparation

Step 1

Preheat the oven to 350°F.
Heat the milk in a small saucepan over medium heat until nearly simmering. Add the white chocolate and stir until melted.
Whisk together the eggs, sugar, Mascarpone cheese, cottage cheese, vanilla extract, cinnamon, and salt in a large bowl. When combined, whisk in the melted chocolate mixture followed by the penne and golden raisins.
Divide the mixture between 6 or 7 (8-oz) ramekins and place the dishes in a large baking pan.
Combine the graham crackers and butter in a small bowl and top each mac and cheese with crumbs.
Place the baking pan on the middle rack of the oven and then use a pitcher to add water to the pan. Stop when the water level covers the bottom-half of the ramekins. Bake for 50 minutes.
