Ingredients
- 2 pounds red-skinned sweet potatoes
- 3 tablespoons light brown sugar; packed
- 2 tablespoons unsalted butter,; at room temperature
- 2 teaspoons orange juice,; freshly squeezed
- 1 teaspoons orange zest,; freshly grated
- 1/2 teaspoon Ground cinnamon
- 1/2 teaspoon Ground allspice
- 1/4 teaspoon nutmeg,; freshly grated
- Coarse salt; to taste
- Freshly ground black pepper; to taste
Preparation
Step 1
Heat oven to 400 degrees F. Place potatoes on baking pan. Bake until fork tender, about 50 minutes, set aside to cool.
When potatoes are cool enough to handle, cut potatoes in half. Using a spoon, scoop pulp into a food processor or large bowl.. Add brown sugar, butter, orange juice, orange zest, cinnamon, allspice, and nutmeg, season with salt and pepper. Using the food processor or a handheld electric mixer, puree until smooth.. Transfer sweet potatoes to serving bowl.
Yield: 4 to 6 servings.
