Amazing Zucchini Bread (WW 2pts)

I made a double batch one for bread and the other I made into cupcakes.

Ingredients

  • Non-stick Cooking Spray (I prefer the baking kind w/ flour in it)
  • 2 cups whole wheat flour
  • 2/3 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp cinnamon
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 2/3 cup unsweetened applesauce
  • 15 oz canned pumpkin
  • 2 cups zucchini grated and drained (skin on)
  • 1/2 cup chopped walnuts (you can sub pecans)
  • 1/2 cup dried cranberrys (mmmm craisins) (you can sub raisins)
  • I skipped the walnuts **

Preparation

Step 1

Preheat to 350F. Coat two 8x4 cooking pans with the non-stick spray.

In a large bowl sift together the whole wheat flour, all-purpose flour, salt, baking soda, baking powder and cinnamon.

With an electric mixer in a large bowl, beat together the sugar, vanilla extract, applesauce and pumpkin. When that's mixed beat in the zucchini.

Then slowly add the sifted ingredients to the wet mixture with the electric mixer. Once it's evenly mixed, fold in the nuts and fruit.

Divide the mix between the two pans and bake for about 50-60 minutes. Check with a toothpick.

Cut each loaf into 10 slices. Each slice is 2 points!
