Noodle pudding at its finest!

Ingredients

  • 8 oz. medium egg noodles
  • 1 Tbsp. cooking oil
  • 5 eggs
  • 8 oz. sour cream
  • 8 oz. cottage cheese
  • 2 Tbsp. lemon juice
  • 1/4 tsp. grated lemon rind
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 1/2 cups raisins
  • 1/2 cup sliced almonds
  • 4 oz. margarine or butter
  • 1 / cup crushed corn flakes

Preparation

Step 1

1. Cook noodles in boiling water with oil for 4-5 minutes. Rinse and drain noodles.

2. Melt margarine, reserving 1 Tbsp., and add margarine to noodles.

3. Mix remaining ingredients together (except corn flakes) and add to noodles.

4. Mix well (mixture should be moist) and pour into baking pan or 2-quart casserole dish.

5. Stir reserved margarine (1 Tbsp.) together with crushed corn flakes and sprinkle on top of kugel.

6. Bake at 325 degrees F. for 40-45 minutes or until firm and golden brown on top.

7. Serve hot with a dollop of sour cream.
