Chicken Chili

Ingredients

  • 2 tbs. olive oil
  • 1 large onion, minced
  • 4 cloves garlic, minced
  • 1 1/2 lbs. cooked chicken, cut in small peices
  • 1/4 cup chili powder
  • 2 tbs. ground cumin
  • 2 chicken bouillon cubes
  • pepper to taste
  • 1 can rotel, diced
  • 1 can stewed tomatoes, diced
  • 2 cans chili beans, drained

Preparation

Step 1

In a stock pot heat oil until hot, add onions and cook until tender.

Stir in garlic, chicken, chili powder, cumin, boullion and pepper.

Add tomatoes and cook for about 30 minutes.

Add beans and cook until heated through.
