Thai Chicken Salad

Ingredients

  • Dressing:
  • 1/4 cup red-wine viaigrette
  • 2 tbsp creamy peanut butter
  • 1 tbsp crushed garlic
  • 1 tbsp lime juice
  • 1 tbsp chili-garlic sauce
  • Salad
  • 8 cups butter lettuce mix
  • 2 cups shredded rotisserie chicken
  • 1 cup seeded and diced cucumber
  • 1 1/2 cups sliced red and green bell pepper
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/2 cup fried rice noodles
  • 1/2 cup cashews, chopped

Preparation

Step 1

1. For dressing, whisk together vinaigrette, peanut butter, 2 tbsp of water, garlic, lime juice, and chili-garlic sauce. Set aside.
2. Toss into lettuce the cucumber, peppers, cilantro, and mint. Add dressing and coat.
3. Sprinkle cashews and rice noodles over salad and serve with lime wedges.
