Ingredients

  • 2 cups hot milk
  • 1/4 cup cold milk
  • 5 tbsp corn starch
  • 3 eggs separated
  • 1/2 tsp salt
  • 1 tbsp butter
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 1 cup coconut
  • 1 pie crust of your choice

Preparation

Step 1

Mix starch, sugar, salt. Dissolve into cold milk, add to hot milk. Stir over medium heat until thickened. Reduce heat and simmer, cover and cook 15 minutes. Add small amount to egg yolks and mix, add to mixture. Cook 5 minutes. Remove from heat, add butter, vanilla and coconut. Pour over baked crust and cool. Refrigerate until served.
