Orzo with Shrimp, Feta, and White Wine

Ingredients
- 8 oz Orzo
- 6 Tbls Olive Oil
- 1 cup crumbled Feta
- 1/4 cup grated Parmesan
- 2 Tbls chopped Basil +
- 1/4 cup chopped Basil
- 1 lb uncooked medium Shrimp, peeled, deveined
- 2 cloves chopped Garlic
- 14 1/2 oz can diced Tomatoes in juice
- 1/2 cup dry White Wine
- 2 tsp dried Oregano
- 1/2 tsp dried Crushed Red Pepper

Preparation
Step 1
1) Preheat oven to 400 degrees.
2) Brush 11 x 7" glass baking dish with oil
3) Cook orzo according to package directions
4) Drain well and pour orzo to baking dish
5) Add 2 tbls olive oil, 1/4 cup feta, Parmesan, and 2 tbls basil. Stirring to blend
6) Heat 2 tbls olive oil in large skillet over medium-high heat
7) Add shrimp and saute until slightly pink, about 2 minutes (shrimp will not be cooked through)
8) Arrange shrimp atop orzo mixture
9) Add remaining 2 tbls olive oil to same skillet
10) Add garlic and saute over medium-high heat 30 seconds
11) Add tomatoes with juice, cook 1 minute
12) Stir in wine, oregano, crushed red pepper, and remaining 1/4 cup basil
12) Simmer uncovered until reduced to think sauce consistency, stirring occasionally, about 2 minutes
13) Season sauce to taste with salt and pepper
14) Spoon over shrimp
15) Bake until heated through, about 10 minutes
16) Sprinkle with remaining 3/4 cup feta and serve
