Ingredients
- 3 C grated carrots
- 2 C flour
- 2 C sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 4 eggs
- 1 1/2 C vegetable oil
- 1 1/4 tsp vanilla
- 1 can (8oz) crushed pineapple with juice
- 3/4 C pecans, chopped

Step 1
1. Preheat oven to 350. Grease and flour 9x13 pan.
2. In large bowl, combine carrots, flour, sugar, baking soda, baking powder, salt and cinnamon. Stir in eggs, oil, 1 1/4 tsp vanilla, pineapple and 3/4 C pecans.
3. Bake for 30 to 40 minutes. Allow to cool.
Cream cheese frosting:
3 1/2 C confectioner's sugar
1 pkg (8oz) cream cheese, softened
1/2 C butter, softened
1 1/4 tsp vanilla
1 C pecans, chopped
In medium bowl, combine confectioner's sugar, cream cheese. 1/2 C butter and 1 1/4 tsp vanilla. Beat until smooth, then stir in pecans.
