SAUSAGE SQUASH SPECIAL

Ingredients

  • 1 lb. bulk pork sausage
  • 1 clove garlic crushed
  • 4 cups sliced summer squash
  • 1/2 cup dry bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 tablespoon snipped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano crushed
  • 2 beaten eggs

Preparation

Step 1

Cook sausage and garlic until meat is brown, drain of excess fat. Cook squash covered in small amount of water until tender, drain. Stir squash and next 6 ingredients into meat, fold in eggs. Transfer to 10x0601-1/2 inch baking dish. Bake at 325 degrees for 25-30 minutes. Bakes 4-6 servings.
