Ingredients
- 3-12 3-12 3-12 c water
- 1/2 1/2 1/2 c pearled barley
- 1 1 1 pkg dried North Woods Blend mushrooms, chopped
- 4 4 4 T butter
- 1/2 1/2 1/2 c each onion, carrot, celery
- 1 1 1 T paste
- S&P
- 1/2 1/2 1/2 c dry red wine
- 8 8 8 c beef stock
- 3 3 3 c corned beefn (1 lb)
- 1 1 1 lb Yukons
- 2 2 2 bay leaves
- 1 1 1 sprig thyme
- 8 8 8 oz kale (3-1/3 c)
- 1 1 1 T red wine vinegar
- 1/2 1/2 1/2 c mayo
- 1 1/c 1/c sour cream
- 1 1 1 T horseradish
- 1 1 1 t fresh thyme

Preparation
Step 1
Cook the barley. Sautee the veggies, then add rest of soup ingredients. Top with creamy sauce.
