    1/2 c dry red wine

    8 c beef stock

    3 c corned beefn (1 lb)

    1 lb Yukons

    2 bay leaves

    1 sprig thyme

    8 oz kale (3-1/3 c)

    1 T red wine vinegar

  • 1/2 1/2

    1/2 c mayo

    1/c sour cream

    1 T horseradish

    1 t fresh thyme

Directions

Cook the barley. Sautee the veggies, then add rest of soup ingredients. Top with creamy sauce.
