Pineapple Upside Down Cake

  • Topping:
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1 cup sliced pineapple
  • Batter:
  • 3 eggs, separated
  • 1 cup flour
  • 5 tbsp pineapple juice
  • 1 tsp baking powder
  • 1 cup sugar



Step 1

Melt butter and spread in 8 inch square pan, sprinkle with brown sugar and layer pineapple slices.
Beat egg yolks, add sugar, juice, baking powder and flour alternately.
Beat egg whites till stiff and fold into batter. Spread batter over top of pineapple. Bake at 350 degrees for approx 1/2 hour or until toothpick comes our clean.
