Ingredients
- 1 large yellow onion, chopped
- 1 green bell pepper, chopped
- 1/4 cup chopped celery
- 1 1/2 pounds fresh okra, sliced 1/4" thick
- 2 tbs. oil for sauteing
- 3 cloves garlic, minced
- 1 (16 oz) can stewed tomatoes
- 2 bay leaves
- 1 tsp. dried basil
- 1/2 tsp. EACH red, & black pepper
- salt to taste
- 1 1/2 tbs milk creole seasoning

Step 1
In a large frying pan, saute onion, bell pepper, celery & okra in oil over medium-high heat for 2-3 minutes, stirring occasionally. Cover skillet for 3-4 minutes, remove lid, stir, recover for 3-4 minutes more; uncover. Contents should appear fairly dry & not slimy, when stirred. Add garlic & cook 2-3 minutes. Add tomatoes, bay leaves, basil, peppers & salt. Bring to a boil; reduce heat & simmer for 8-10 minutes. Remove bay leaves & serve over rice.
