Mocha gelato

Ingredients

  • 1 qt milk
  • 4 oz sugar
  • 2 oz cocoa powder
  • 1/2 oz cornstarch
  • pinch salt
  • 8 oz milk chocolate, chopped
  • 3 oz corn syrup
  • 1 oz shot of espresso
  • 1 tsp instant espresso powder

Preparation

Step 1

Scald the milk and corn syrup. Combine sugar, corn starch and cocoa powder. Add dry mix to milk and simmer for 4 minutes, stirring constantly. Pour over chocolate to melt. Add espresso. Chill 8 hours, then freeze in ice cream maker.
