Middle Eastern White Beans

Actually a modification of two recipes, one for Moroccan white beans and one for Middle Eastern white kidney beans

Ingredients
- 2 cans white beans, white kidney beans, or garbanzos; drained and rinsed
- 3 ripe tomatoes, finely diced
- 3 cloves garlic, minced
- 1 medium onion, finely diced
- 2 T. chopped fresh parsley
- 2 T. chopped fresh cilantro
- 2 t. cumin
- Juice of 1/2 lemon
- 1-1/2 t. ginger, grated
- 1/2 t. paprika
- 1 T. olive oil
- 14.5 oz beef broth
Preparation
Step 1
Add all ingredients to a large pot. Cook on medium low, stirring occasionally, until the beans are soft and the liquid has evaporated.
