Ingredients

  • 2 rib eye steaks, about 1/2 inch (1.5 cm) thick
  • 2 Tbs (30 ml) butter
  • 1/4 cup (60 ml) finely chopped shallots
  • 2 cups (500 ml) sliced mushrooms
  • 1/4 cup (60 ml) Madeira wine
  • 1 Tbs (15 ml) Worcestershire sauce
  • 1/3 cup (80 ml) beef stock
  • 1 Tbs (15 ml) chopped fresh parsley
  • Salt and freshly ground pepper to taste

Preparation

Step 1

Saute the steaks in butter in a large skillet until desired degree of doneness. Remove from pan. In the same pan, using butter left in the pan, saute the shallots until soft and transparent. Add the mushrooms and saute 1 to 2 minutes. Add the Madeira, Worcestershire sauce, beef broth, salt and pepper and bring to a boil over high heat. Allow to reduce by half. Serve sauce on top of steak and sprinkle with chopped parsley. Serves 2.
