Ingredients

  • 4 boneless skinless chicken thighs
  • 2 Tbsp. finely chopped onion
  • 2 Tbsp. lemon juice
  • 2 Tbsp. O.J.
  • 2 Tbsp soy sauce
  • 1/2 tsp curry powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. poultry seasoning
  • 1 1/2 tsp. cornstarch
  • 1 Tbsp. cold water

Preparation

Step 1

Place chicken in a microwave-safe dish coated with cooking spry.
Combine the onion, juices, soy sauce and seasonings; pour over chicken.
Cover and microwave on high for 3 min; turn chicken. Cover and cook 2 - 4 min. longer or until is no longer pink and a meat thermometer reads 180. Remove chicken; let stand for 1 - 2 min,
Combine cornstarch & water until smooth; stir into cooking juices. Microwave, uncovered, on high for 1 - 1 1/2 min or until thickened stirring every 30 sec.. Serve sauce with chicken.
