ROASTED CARROTS WITH MAPLE SYRUP

Ingredients

  • 2 lbs peeled baby carrots
  • 3 cloves garlic, mashed plus 8 gloves, unpeeled
  • 3 T olive oil
  • salt and pepper to taste
  • 1/4 C maple syrup

Preparation

Step 1

On a rimmed baking sheet, toss together the carrots, mashed garlic, whole garlic, oil and salt and pepper.
Roast for 30 minutes or until nicely browned and fork-tender, stirring several times. Transfer to a serving bowl and stir in the maple syrup.
