Ingredients

  • 2 onions, diced
  • 1/4 cup oil, divided
  • 2 1/2 to 3 lbs. boneless, skinless chicken breasts
  • 14 1/2 oz can diced tomatoes
  • 1/2 cup white wine or chicken broth
  • 1 tbs curry powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried thyme
  • 1/4 tsp. nutmeg
  • 1 apple, cored, peeled, and cubed
  • 1/4 cup raisins
  • 3 Tbs whipping cream
  • 1/2 tsp. lemon juice
  • 2 cups prepared rice

Step 1

Saute onions in 2 tbs. oil over medium heat in a large skillet; remove onions and set aside. Add remaining oil and chicken to skillet; heat chicken until golden. Return onions to skillet; add tomatoes, wine or broth and spices. Mix well; reduce heat, cover and simmer for 20 minutes. Add apple, raisins, and cream; simmer over low heat for an additional 6 to 8 minutes. Stir in lemon juice. Serve over prepared rice.

Makes 3 to 4 servings.
