Garlic-Chive Mashed Potatoes

Ingredients

  • 4 1/2 c Yukon Gold; or baking
  • 6 lg cloves Garlic; peeled
  • 1/2 ts Salt
  • 2/3 c 1% milk
  • Whole chives; optional
  • 1/2 c Plain low-fat yogurt
  • 1/4 c Chopped fresh chives

Preparation

Step 1

Place cubed potatoes and garlic in large saucepan and cover with water; bring to a boil. Reduce heat, simmer 15 minutes or until tender; drain well. Return potato and garlic to saucepan. Add milk, yogurt and salt; beat at medium speed of an electric mixer until mixture is smooth. Add chopped chives and stir well. Garnish with whole chives, if desired.
