Chicken ala King

Great served over biscuits. Warm any leftovers with additional milk as this thickens once it is chilled.
Ingredients
- 4 chicken breasts
- 1 stick butter
- 1 cup flour
- 2 to 3 cups chicken broth
- 3 to 4 cups milk
- 1 pkg frozen mixed vegetables
- Salt to taste

Step 1
Boil chicken breasts - reserve and strain broth. Cook chicken breasts then either shred or chop into bite sized pieces (your choice).
In a 5 quart Dutch oven, melt 1 stick of butter slowly so it does not brown. To that, add about 1/2 to 1 cup of flour (regular or self-rising - does not matter). Stir and mash out any lumps. Slowly add broth, stirring constantly. Once you have added broth, add frozen vegetables and chicken, then keep adding milk until you reach the desired consistency. You don't want it too thin and definitely not too thick. I sometimes add a little yellow food coloring to give it a little color. Adjust seasoning as you like.
Warm and serve over fresh baked biscuits.
