Chocolate Mousse

Ingredients

  • 8 oz chocolate, chopped
  • 4 egg yolks
  • 1 tbsp sugar or honey
  • 2 egg whites
  • 12 oz cream, whipped
  • 1 tbsp alcohol (rum or brandy) optional.

Preparation

Step 1

Have all ingredients ready and prepped.
Melt chocolate over water bath. Whip yolks and sugar over water bath until warm and smooth. Continue to whisk off heat until all sugar is dissolved. Add alcohol if using.
Whisk egg whites to soft peaks. Whisk the melted chocolate and some of the whipped cream and the yolk mixture together and quickly but gently fold together.
Add the rest of the whipped cream and egg whites, fold together. Chill for 2 hours before serving.
