Ingredients

  • Cookie Base:
  • 1 cup butter, melted
  • 1/2 cup powdered sugar
  • 2 cups flour
  • Lemon filling:
  • 2 cups sugar
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 4 eggs, lightly beaten
  • 1/2 cup fresh lemon juice
  • 1/2 teaspoon lemon rind, freshly zested

Preparation

Step 1

Preheat oven to 350.

Line 9 x 13 inch glass baking dish with foil, extending foil over rim; spray foil with cooking spray. Mix together melted butter, powdered sugar, and flour till well blended. With floured hands, press mixture into the bottom of glass baking dish. Bake for 20 minutes. (Lightly browned)

In medium bowl, whisk together sugar, flour, baking powder and salt until blended. Add eggs, lemon juice, and lemon rind and beat by electric mixer until well blended. Pour mixture over baked crust and bake for 15-20 minutes more till set. Watch closely, it may brown quickly, you don't want brown, you want pale.

Transfer to wire rack. Allow bars to cool, dust with powdered sugar and cut into squares.

Optional topping:
2 cups sour cream
1/2 cup sugar
1/2 teaspoon vanilla

Combine in bowl and spread over filling. Bake 7 to 9 minutes longer or until set. Cool on wire rack. Refrigerate over night. Cut just before serving.
