Double-Bean Burritos

Ingredients

  • 1 bag of boil-in-bag brown rice, prepared according to directions
  • 1 cup of chunky salsa
  • 1 can black beans (15 oz.), rinsed and drained
  • 6 flour tortillas (10" each)
  • 6 Tbs. of bean dip
  • 3/4 cup of monterey jack cheese with jalapeno, shredded
  • 1 peeled avocado, cut into 6 slices
  • 12 cilantro sprigs
  • 6 lime wedges (optional)

Preparation

Step 1

Cook rice according to package directions.
While rice cooks, combine salsa and black beans in a small saucepan. Cook over medium heat 5 minutes or until thoroughly heated.
Stack tortillas. Wrap the stack in damp paper towels, and microwave on high for 25 seconds or until warm.
Spread 1 Tbs. of bean dip over each tortilla. Top each tortilla with 1/4 cup rice, 1/3 cup of black bean mixture, 2 Tbs. of cheese, 1 avocado slice, and 2 clilantro sprigs -- roll up.
Serve with lime wedges and salsa for dipping as desired.
