Ingredients
- Crunch:
- 1 1/2 cups sifted all-purpose flour
- 1 cup brown sugar
- 1 Tbsp cinnamon
- 1 1/2 cup oatmeal
- 1 1/2 sticks melted butter
- 4 cups rhubarb (1/2 inch pieces)
- Sauce:
- 1 cup sugar
- 2 Tbsp cornstarch
- 1 cup water
- 1 tsp vanilla

Step 1
Mix flour, oatmeal, brown sugar, butter and cinnamon until crumbly.
Press about two-thirds of crumb mixture into a lightly greased 9" square baking dish.
Cover with rhubarb.
Combine ingredients for sauce, cook until clear and pour over rhubarb.
Top with remianing crumbs and bake at 350 degrees for one hour or until bubbly.
